Peach BBQ Sauce

Ingredients

2 ripe but firm peaches, pitted & quartered

1 medium tomato, quartered and seeded

2 Tbs cider vinegar

1 Tbs canola oil

1/2 c chopped onion

2 tsp finely chopped fresh ginger

2 Tbs honey

1/4 tsp freshly ground pepper

1/2 tsp kosher salt

Directions

1. Puree peaches, tomato and vinegar in a food processor until smooth.

2. Heat oil in a medium saucepan over medium-high heat. Add onion and cook, stirring occasionally, until golden brown, about 5 to 7 minues.

3. Add ginger and cook, stirring frequently, until fragrant, 1 to 2 minutes.

4. Add the peach puree, salt, honey and pepper to taste. Bring to a boil over high heat, and then reduce by half, about 20 to 25 minutes.

Suggested meats are grille chicken, pork chops or salmon.
